Curried Cauliflower Egg Mayo

Entertain your guests and get the kids to eat their vegetables with this spicy twist on the classic egg mayo sandwich.

Ingredients

French Baguette

Extra Virgin Olive Oil

Eggs
, hard boiled and roughly chopped
1/2
head
Cauliflower
, boiled until just soft and roughly chopped

tablespoons
Mayonnaise

teaspoon
Curry Powder
Coarsely Ground Black Pepper
, to taste

Handful of
Alfalfa Sprouts

Directions

Preheat oven to 180° degrees Celsius.
Cut baguette into thin slices (about 1 centimetre thick).
Lay on baking tray and brush olive oil on top.
Bake at 180° degrees Celsius for 5 minutes.
Add eggs, cauliflower, mayonnaise and curry powder into a bowl. Mix well.
Remove baguettes from oven and plate.
Top baguette slices with egg and cauliflower mayonnaise.
Garnish with cracked black pepper and alfalfa sprouts.
