This summery salad is done in no time! Use real crab meat for extra decadence or crab sticks if you want it to be a quick and more affordable meal. Beautiful presented in the avocado shells, it is an eye-catcher too!

Ingredients

Avocados
, ripe, halved and pitted

Crab Sticks
, or Lump Crab Meat.

Apples
, diced
1/3
cup
Cucumber
, de-seeded and diced

tablespoons
Mayonnaise
, low fat

tablespoons
Fresh Herbs
, e.g. Parsley, Dasil, Dill, Coriander or Tarragon

teaspoon
Red Wine Vinegar
a pinch of
Salt
a pinch of
Ground Black Pepper

Directions

In a bowl, mix mayonnaise, herbs, vinegar, salt.
Stir in crab meat apples and cucumbers and chill in fridge for 10 minutes.
Chill in refrigerator.
Cut avocado in half and remove pit. Scoop out some avocado, add into the salad mixture.
Divide crab salad mixture and heap into the halved avocados.
Sprinkle a dash of black pepper over.
