Health benefits of Avocado: They may be high in calories and fat, but they contain good fat, which actually lowers your cholesterol. They are also a great source of protein, potassium, and fiber. 

Health benefits of using Yoghurt: Yoghurt contains probiotics, otherwise known as good bacteria. It is much healthier compared to mayonnaise, which is used in the original version of prawn cocktails, seeing as mayonnaise is high in calories and saturated fat.

Ingredients

Medium Prawns
, peeled and cooked

Ripe Avocados

Ripe Tomatoes
, diced

Small Cucumber
, diced

Shallots
, diced

Fresh Coriander
, chiffonaded

Lemon

Natural Yoghurt
Sea Salt and Ground Black Pepper
, to taste

Directions

Halve the avocados, remove the seed and remove the flesh from the shells, retaining the shells for later.
Mash the avocado flesh and add in the cucumber, tomatoes, shallots and yoghurt.
Squeeze the lemon juice over the mixture and grate a bit of the rind over it, then season with salt to taste.
Fill the avocado shells with the mixture, top each with a prawn, sprinkle with coriander, grate some black pepper and serve.
