Fried Quinoa

Little known to many, quinoa has been consumed for thousands of years for its high nutritional value. Steam and fry it with your favourite ingredients such as egg and chicken and you will have a piping hot one-dish meal full of natural goodness all in one bowl.

Ingredients

Frozen Mixed Vegetables
, thawed

Butter

Garlic

Light Soy Sauce

Egg
Spring Onion

Directions

Put quinoa with water in a pot. Bring to a boil over medium heat. Then cover with a lid and simmer over low heat until all the liquid is absorbed for 10 minute.
Turn the heat off but leave the lid on to steam the quinoa for another 5 minutes. Fluff it with a fork. Set aside.
Saute garlic with butter in a pan over medium heat until fragrant.
Stir-fry chicken and frozen mixed vegetables (thaw it first) until almost cooked.
Add in quinoa and fry them together.
Season to taste with soy sauce.
Add in beaten egg and fry until cooked.
Serve and garnish with spring onion.
