A nutritious soup for the whole family, this fuss-free recipe is perfect for busy cooks.

After a long day at work or school, a bowl of this piping hot black bean pork rib soup is great not just for soothing hunger pangs but the calcium-rich black beans also help with digestion.

Pork Ribs

Water

Dried Scallops or Cuttlefish
, cut into small pieces (optional)

Black Beans
, rinsed thoroughly till water runs clear

Red Dates

teaspoon
Salt

Directions

Blanch pork ribs in a separate pot of boiling water for about 2-3 minutes to remove scum.
Remove the ribs and throw the water away.
Place all ingredients in a pot and bring to boil. Then simmer for 2 hours. (Or in a slow cooker for 3 hours on high, or 6 hours on low)
Serve hot and enjoy.
