Infused with coffee, the pork ribs are baked to crisp and glazed with maple syrup before serving.

Directions

Using your fingertips, coat ribs with 4 tablespoons maple syrup. Sprinkle 1/2 teaspoon salt, 2 teaspoons black pepper, 2 tablespoons cajun powder and 3 tablespoons of sugar. Coat evenly.
Dissolve 2 tablespoons of coffee in 200 millimetres of hot water.
Sieve coffee mixture over the ribs. Make sure both sides are well coated. Leave the ribs to marinate at room temperature for 45 minutes.
Preheat oven to 160 degree Celsius for 10 minutes. Place marinated ribs on a large oven-safe tray and cover the tray with aluminium foil. Place the tray in oven, on the middle rack to bake for about 2 hours.
Add in 2 tablespoons of worcestershire sauce, 4 tablespoons of tomato ketchup, 6 tablespoons of maple syrup and remaining coffee meat rub in a bowl and mix well.
Heat the frying pan with olive oil over medium fire. Add the sauce mix and stir. Place the ribs in the pan. Sauté the ribs until sizzling and slightly charred.
Transfer to a plate and it's ready to serve.
