The Fuqing people used to preserve their vegetables so they could eat them all year round. Plus, this delicious tofu is topped off with something unusual.

Soft and silky tofu, topped off with minced pork, spring onions and an ingredient that is typical of the Fuqing region - olive preserved vegetables. Find them in the supermarket or wet market and start cooking!

Directions

Remove tofu from packaging, leave it aside for 15 minutes. Remove water.
Cut tofu into 9 pieces, but leave it as a block.
Add oil in wok, add in minced ginger and garlic and sauté till fragrant.
Add in minced meat and fry till it doesn't lump together. Add in wine.
Add in preserved olive vegetables and spring onion. Place the ingredients on top of tofu.
Steam for 5 minutes.
