Ingredients

Rice
, pre-soaked in water
1/2
Pumpkin
, cut into chunks (for the roast vegetable)

Pork Belly
, cut into small pieces
1 1/2
tablespoons
Dried Shrimps
, soaked in warm water for 10 minutes and then rinsed

Mushrooms
, trimmed and chopped

Sow Thistle
, cut into pieces

Directions

Fry garlic and shallots in oil till golden brown.
Add in pork belly, mushrooms and dried prawns.
Add in pumpkin cubes. Continue stir-frying for another 2 minutes till all smells aromatic.
Add in rice and seasonings. Mix well.
Transfer all the ingredients into a rice cooker. Add in water to completely cover the pumpkin rice to about 1centimetres above the surface. Turn on rice cooker and allow it to cook till.
