Quick and easy to make, this salmon patties with raisin brown rice is not only nutritious but also delicious!

Directions

For brown rice:
 Rinse the brown rice, place in rice cooker along with chicken stock and raisins. Cook the rice.
Remove salmon skin and bones if any. Rinse and pat dry.
Blend ingredients for salmon patty in a blender until mixture is smooth.
Shape out the salmon mixture, using about 3 tablespoons for each patty, into round patties. Dust them with a little corn flour.
Get ready a non-stick pan with 2 tablespoons cooking oil over medium low fire.
Pan-fry the salmon patties till golden brown on each side, about 5 minutes each side.
Once the rice is done, add some freshly chopped basil leaves and toss gently.
Dish up the salmon patties to be served with rice and lettuce on the side.
