Cute Muffin-Size Chocolate Fruit Cake

A pastry that combines the sweetness of fruit with savoury chocolate.

Serve these little cupcakes at any party as a sweet snack. No matter if you are hosting a tea party or your little ones birthday: kids will love them as much as grown ups.

Ingredients

Plain Flour
Cocoa Powder
Baking Powder
Castor Sugar
6
Eggs
Butter
Chopped Walnuts
Chocolate
Instant Coffee Mixture
Honey
Milk
Mixed Fruits

Directions

Preheat oven to 180°c.
Sieve plain flour, baking powder and baking soda into a bowl, then add castor sugar (dry ingredients).
Separate 6 egg whites and yolks.
Mix butter, egg yolks, melted chocolate, chopped walnuts, milk, mixed fruit.
Over a double boiler, melt chocolate.
Add in dry ingredients and mix into a batter.
Beat 6 egg whites and castor sugar to form meringue.
Mix meringue to muffin batter and well.
Line baking tray with muffin cups and fill with muffin batter and top with mixed fruit.
Bake at 180°c for 20 minutes.
Remove from oven. Cool and serve.
