Ingredients

500g
boneless chicken leg meat cut into bite-sized pieces

Pasar Singapore farm fresh egg

cup tapioca flour
1
tsp salt & pepper
Vegetable cooking oil (Duck brand is used here)

tsp FairPrice butter
Handful of curry leaves

Salted Egg Yolks

chilli padi (sliced)
3
cloves of garlic (chopped)

Directions

Marinate chicken with egg, salt and pepper.
Coat chicken pieces entirely with tapioca flour and transfer it onto a plate.
Heat up oil in a pan. Deep fry chicken until crispy and golden brown, and drain excess oil.
Separate salted egg yolk from egg white. Put egg yolk in a bowl. Steam for 4-5 minutes.
Smash the steamed salted egg yolk.
Heat oil in another frying pan, fry the chilli, garlic, curry leaves and butter until crisp and fragrant.
Add the salted egg yolks and stir fry until mixture becomes bubbly.
Put the fried chicken into the pan and mix well.
Serve hot.
