Hawker-style Peanut Pancake

Ingredients

Plain Flour

Baking Soda

Dry Yeast

Crushed Peanuts

Directions

Put all ingredients together and mix well with a whisk. Make sure there are no lumps.
Cover loosely and let rest for 30 minutes until its bubbly.
While the batter is resting, put all the fillings’ ingredients in a bowl and mix well.
Lightly oil a pan and heat over low/medium heat.
Pour half the batter into the pan and cover for 3-4 minutes. You can use a spoon to lightly spread the batter to cover the entire pan surface.
Add peanut fillings and cover for another 1-3 minutes.
Fold into half with a spatula. Serve warm.
