A simple dish well loved by the young and old, Nyonya cincalok omelette is an egg dish made of fermented small shrimps or krill. Try cooking this with our recipe and let the fragrance of cincalok filled your home.

Eggs

Onion
, thinly sliced

Red Chilli
, deseeded and sliced thinly

Cooking Oil

Cincalok
, to taste, (for the seasoning)

White Pepper
, (for the seasoning)
Coriander
, (for serving and garnishing)

Lime
, halved, (for serving and garnishing)
Sambal Belacan
, (for serving and garnishing)

Directions

Combine eggs with cincalok and white pepper in a small bowl; mix well.
Heat oil and fry the onions and chilli on a gentle flame, until the onions turn soft and translucent.
Spread the onions evenly in the saucepan.
Whisk the egg mixture and pour it over the onions.
Ensure the onions are completely coated with egg. Cook a few minutes on one side until slightly browned, then flip to the other side.
Cut up the omelette into smaller pieces, and serve/garnish with lime and coriander (if desired). Add some sambal belachan on the side for extra zing!
