Black Pepper
, coarsely cracked

Minced Almonds

Sesame Oil

Soy Sauce

Dry Sherry

Red Wine
A dash of
Salt

Spring Onions

Directions

Combine black pepper, minced almonds, salt and sesame seeds in bowl.
Press tuna steaks into mixture, until coated.
Heat sesame oil over medium-high heat.
Add tuna steaks and sear about 1- 2 minutes each side. Cook longer if you like them well done.
Transfer the steaks to a plate and cover with aluminum foil to keep warm.
Add a bit more oil to pan if needed, then add soy sauce and sherry.
Add red wine, garlic and spring onion.
Reduce heat and simmer until mixture is slightly reduced, scraping up any brown bits, about 1 minute
Slice the tuna cross-wise into sushi size and lay them on a serving plate.
Spoon sauce over, and garnish with spring onions and red chilli or sprouts on top. Or use as a dip.
