Preheat oven to 350 degrees. Line 2 standard muffin tins with cupcake liners; set aside.
Mix the melted butter, graham crumbs and 1/4 cup sugar in a bowl and press on the bottom of the cupcake liners.
Place 2 tbsp of the chopped chocolate chip on top and bake for 5 minutes until the edges are golden brown. Cool.
Mix all dry ingredients in a bowl. in a separate bowl, mix all the liquids.
Fill each muffin cup three-quarters full with cake batter. Sprinkle each with remaining chocolate and graham cracker mixture. bake for 20 minutes.
Cook egg whites bane marie style with the white sugar. When no sugar particles are present, whisk using the Kitchen Aid on high speed until stiff peaks are formed.
Pipe on top of the cooled cupcakes and torch for that perfect roasted look.
